Organic Farmers Market

Between you and me I am so pumped for our farmers market trip this weekend. It’s one of my favourite things to do, seems a little crazy that I’m back home after an amazing festive season and this is what I’m looking forward to! But hey, sometimes it is the little things, right?

So today I’m mapping out our meals for the week, this way I know exactly what I need, which saves time and wastage. Mapping out meals for a family can be overwhelming at times, so I tend to opt for a couple of meals that I can make in bulk for lunches and freeze some for the following week - lentil Dahl and bolognese with hidden veggies for the boys and lentilnase for me are my go to’s.

I allow for one “make it up meal” - something quick and easy. It’s usually steamed or roast veggies with fresh herbs, olive oil, and chickpea pasta, or a healthy takeout option. I roast a big batch of vegetables on Sunday so they are ready to go for lunches and the “make it up meal”.

I also layer meals as we all have slightly different tastes at my home, this saves making multiple meals. For example pumpkin and spinach salad, with chicken for the boys and as is for me, I plan on sharing some layered recipes for families down the track - so stay tuned!
